Wandrmix-J2
Code Number: TO-022
Ingredients: Carrageenan, Locust bean gum, Gellan gum, Potassium chloride, etc.
Series: Compound Thickener
Introduction
Wandrmix-J2 (TO-022) is an advanced hydrocolloid compound formulated with Carrageenan, Locust bean gum, Gellan gum, and Potassium chloride. It provides uniform particle size, low-temperature solubility, and a synergistic ratio yielding superior cost-effectiveness. Highly clarified and acid-resistant (pH 3.5–5.0), it offers outstanding shape-retention that inhibits syneresis (water separation) and transit breakage, creating a crisp entry that instantly melts away on the palate.

Functions and Applications
Key Characteristics
- Uniform fine powder with excellent low-temperature solubility
- Synergistic high-purity hydrocolloid matrix with high cost-effectiveness
- High clarity and acid resistance (ideal for acidic pH 3.5–5.0 or neutral dairy formulas)
- Robust shape-retention that prevents water separation and vibration breakage during distribution
- Delivers a smooth, elastic, and crisp mouthfeel with rapid flavor release
Recommended Applications & Dosages
| Application | Dosage |
|---|---|
| Fruit jellies & various flavored cup jellies | 0.5%–0.8% |
| Fruit & various flavored squeezable pouch jellies | 0.2%–0.5% |
Usage Guidelines
- Dry-blend dispersion: Blend with approx. 5x sugar powder. Slowly add into >30x warm water with high-speed agitation until fully lump-free, then transfer to the formulation tank.
- Direct shear option: Add directly to a high-shear emulsification vessel at 50–60°C.
- Thermal processing: Mix uniformly with sugar syrup, heat to 95–100°C, and hold for 3–5 minutes. Cool to approx. 75°C before introducing juices, acidulants, and flavors prior to filling, sterilization, and cooling.
General Recommended Dosage: 0.2%–0.8%
