Functions and Applications
Key Characteristics
- User-friendly composite improver that simplifies handling and production.
- Powerfully increases cohesiveness, chew texture, and water-holding capacity.
- Maintains structural stability throughout extended distribution.
- Reduces raw material usage and total recipe cost.
Target Applications
- Processing of commercial surimi products.
- Not recommended for use in raw frozen surimi blocks.
Usage Guidelines
- Dissolve in ~15 parts warm water and stir until fully dissolved, or disperse directly in high-shear processing equipment with other ingredients.
- Alternatively, add powder and ice water directly to surimi prior to chopping.
Addition Rate: 0.8%–2.0% based on total meat weight.
