Introduction
Kaotan-F2 (TD018-SC) is a compound hydrocolloid system combining Carrageenan, Hydroxypropyl Starch, Potassium Chloride, Konjac Gum, and Glucose. Designed to build stable protein-gel network matrices, it maximizes water-holding capacity and protects surimi products against texture degradation during cold chain and frozen storage. It delivers improved cohesion, springiness, and clean flavor expression.

Functions and Applications
Key Characteristics
- Builds uniform, high-strength protein-gel networks for superior water retention.
- Prevents syneresis, shrinkage, and spongy texture during frozen storage.
- Increases finished elasticity and slice cohesion.
- Preserves natural seafood flavor.
Target Applications
- Various finished surimi products (fish tofu, fish balls, crab flavor sticks).
- Not suitable for raw frozen surimi processing blocks.
Usage Guidelines
- Dissolve in 10–15 parts warm water and stir until fully hydrated, or incorporate directly with other dry ingredients using high-shear mixing equipment.
- Add directly during the mincing and mixing stages of the fish paste.
Recommended Dosage: 0.2%–1.5% of total meat weight (~0.5% optimal for most formulations).
