Introduction

Xanthan Gum, also known as corn sugar gum, is a cream-colored to white free-flowing powder with slight odor. It dissolves easily in both cold and hot water, forming neutral solutions that are resistant to freeze-thaw cycles. As an extracellular polysaccharide produced by Xanthomonas campestris fermentation, it exhibits unique rheological properties, excellent water solubility, stability to heat and pH, and compatibility with various salts.
